High-resistance coils and low-power devices are essentially there to provide a similar sensation to smoking, meaning the main focus is the throat hit they provide.
On the other hand, one of the main attractions of sub-ohm vaping is the intense flavour you can pull from your favourite e-liquids.
The enhanced flavours happen because each draw you take vaporises more liquid, which results in a more concentrated and therefore stronger flavour.

When sub-ohm vaping, you’ll use a lower nicotine strength, high-VG liquid, so that the hit is smooth and not too intense, and you can produce bigger and thicker vapour clouds.
Is it safe?
Absolutely!
When done correctly, sub-ohm vaping is perfectly safe. However, because you’ll be using a higher-powered device with lower-resistance coils, there are a few things you should be wary of.
Lots of vapers like to sub-ohm with a mechanical mod, which is essentially a tube that holds a battery and delivers power to your coil with no internal regulation.
If you don’t know much about ohms-law or battery safety, this is the riskiest way to use this technique, so it’s important to do your research.
